Description

This Grilled Caesar Salad is a smoky, flavorful take on the classic. Charred romaine, creamy homemade dressing, grilled chicken, and crispy croutons make it satisfying enough to be the main course.


Ingredients

2 romaine hearts, halved lengthwise

1 grilled chicken breast, sliced

1/3 cup freshly grated Parmesan

1 cup homemade garlic croutons

Olive oil for brushing

Salt and pepper to taste

For the dressing:

1 egg yolk (or 2 tbsp Greek yogurt)

2 anchovy fillets, mashed

1 tsp Dijon mustard

1 garlic clove, minced

2 tbsp lemon juice

1/4 cup olive oil

1 tsp Worcestershire sauce


Instructions

1. Preheat grill to medium-high.

2. Brush cut sides of romaine with olive oil. Lightly season with salt.

3. Grill romaine cut-side down for 2 minutes, flip and grill 30 seconds more.

4. Grill chicken breast until cooked through and slice thinly.

5. Blend all dressing ingredients until creamy.

6. Arrange grilled romaine on a plate, top with sliced chicken, croutons, and Parmesan.

7. Drizzle with dressing and serve immediately.

Notes

You can substitute anchovies with 1 tsp capers for a vegetarian twist.

For keto, use almond flour croutons.

Add grilled corn or avocado for variation.
